Ginger Lovers Cocktail
This recipe was created at The Understudy below the cocktail bar 18o6. I specifically asked for something special to use in a marriage proposal. It didn't end up being used unfortunately, but I feel like the recipe should not be lost to history.
The Recipe
My name's (snip), I am the bartender from 18o6 who made you the ginger cocktail yesterday. I've been told you would like the recipe for something very special, if you need any help I would be more than happy to make the drink for you or help in whichever way I can.
Here's the recipe:
50 mL Golden Amber Rum (I used a Pampero Anejo which is relatively well priced, but it's nice and bold but smooth and perfect for this drink)
30 mL fresh squeezed lime juice (it's very important it's fresh squeezed and not bottled)
20 mL spice syrup (2 parts sugar to 1 part water brought to the boil with cinnamon stick, cloves and star anise)
20 mL raw ginger juice (made by blending and juicing raw ginger root)
20 mL fresh juiced apple (if you can't freshly juice the apple, buying the cloudy not from concentrate apple juice from coles would work just as well)
The drink is shaken with cubed ice and strained into the glass. I garnished with a piece of Crystalised Ginger root on a stick over the glass.
If I were to remake the drink I might also add 1 egg white to provide a nice head with texture on the top and 10 mL of soda water to give a hint of fizz to the drink. You could then drop dots of Bitters onto the head and these can be pulled with a pin to create small heart shapes on the top of the drink.
